Seasoning
1 tablespoon soy sauce
1 tablespoon cooking wine
1 tablespoon sugar

1000 grams pork
2 green onions
Ginger 1
Aniseed 2
Cinnamon 1
Chili 3

Method
1 Cut pork into large pieces, to ensure that each has a skin and fat lean meat; Wash and cut onions into sections, ginger slices;
2 Heat wok, line up the meat pieces in wok, turn the meat onstantly and use the grease from the meat to fry until meat is golden brown on both sides.
3 Leave small amount of oil and melt the sugar using low heat untill turning yellow. Turn off the heat, mix in pork evenly;
4 Put in green onions, ginger, aniseed, cinnamon, red pepper, wine, soy sauce. Add warm water to barely over the meat. Heat to boil, then simmer for 40 minutes. Reduce the sauce until thicken.

★ Chefs tips
Nutmeg, cloves, pepper, strawberry, bay leaves, and so are a good mix for pork, but too much of them can over power the taste of pork.
