Dried mustard green 200 grams

Oil 1000 grams

1 tablespoon soy sauce
Method
1 Scrape pork skin clean, add cold water into the pot, cook until cooked through, remove and wipe off the water, brush on soy sauce when still hot;
2 Add oil in frying pan, heat till 80% hot, put in the pork with skin side down into the pot,
deep fry until dark brown, remove and let cool; soak and wash mustard green;
3 Cut fried pork into big slices, put the meat with skin side down, in a large bowl, top with mustard greens, pure in evenly the soy sauce, put into the steamer and steam about 30 minutes until the meat very tender;
4 Turn off the heat, remove the meat bowl, cover with a plate on top of the bowl, drain out the soup in a bowl, and then turn bowl upside down, so that the meat on top of mustard greens;
5 Heat the wok, pour in the soup and reduce to thick source and pour on top of the dish.
