Method
1 Chop shrimp and fat meat mince-like; mince onions, ginger; chop ham, water chestnuts, red pepper;
2 Mix chopped shrimp fat meat, water chestnuts in a bowl. Mix in wine, ginger, onion, salt, MSG, egg white and starch and shape into pattys. Pad one side with cilantro leaves and other with chopped ham;
3 Put oil in the pan and heat to 40% hot. Fry shrimp cakes to golden brown. Decorate with chopped ham and cilantro.
