Method
1 Wash and cut the onions, cilantro, ginger peeled and fluff; washed and shredded red pepper;
2 Wash the meat into cold water pot cook with high heat to boil and drain the water;
3 Add hot water to meat in pot to barely soak the meat, add everything except the red pepper and cilantro. Cook with high heat for half an hour, then switch to a low simmer for 2 hours or more;
4. Remove meat, drain and let cool, cut into thin slices, sprinkled with red pepper and cilantro.
